It isn't fall without some Apple Cider Protein Donuts! These delightful protein donuts have a rich apple cider flavor that's sweet but slightly tart, all rolled in cinnamon "sugar." They're hard to resist and only 116 calories per donut!
NOTES: The gluten-free baking flour can be swapped for all purpose flour or fine oat flour. Also, the whole egg can be substituted with two egg whites. We used Swerve granulated sweetener for the cinnamon "sugar" coating, but you can use any sweetener you like.
Apple Cider Protein Donuts
Makes 6 donuts
1/2 cup (60g) Metabolic Nutrition Protizyme in Butter Pecan flavor
1/3 cup (40g) gluten-free baking flour
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 cup unsweetened applesauce
1 large whole egg
1/4 cup apple cider vinegar, reduced
1/2 tsp. pure vanilla extract
2 tbsp. buttery spread (or unsalted butter)
2 tbsp. calorie-free sweetener
2 tsp. ground cinnamon
Preheat your oven to 350 degrees F.
Add dry ingredients (through nutmeg) to a medium mixing bowl and whisk to combine.
Add one-half cup apple cider vinegar to a small saucepan and simmer over medium-high heat until volume is reduced to one-quarter cup.
Add reduced cider and other wet ingredients (through vanilla) to dry ingredients and mix until no dry clumps remain.
Divide batter between six wells of a well-greased nonstick donut (I used silicone).
Bake your donuts in the preheated oven for 15 minutes, then remove.
Combine sweetener and cinnamon in a medium bowl.
Melt 2 tbsp. buttery spread (or unsalted butter) in the microwave for 30-45 seconds.
Dip each cooked donut in the melted butter then toss in the cinnamon mixture, setting each donut aside on a plate.
Leftover donuts will keep in the fridge in an airtight container for at least a week.
