BLACK FOREST PROTEIN WAFFLES

These Black Forest Protein Waffles combine the flavors of chocolate, dark sweet cherries, and whipped cream. So decadent, but still healthy! We packed them with protein, used no added sugar, and made them gluten free. Feel free to top these with a drizzle of sugar free chocolate syrup and chocolate chips if you like!


NOTES: We used a sweetener that measures like sugar for these waffles. Be sure to check your sweetener's conversion chart and adjust if needed. If you don't have gluten free baking flour, you can swap for all-purpose flour or fine oat flour. If you need lower fat, substitute half a cup of egg whites for the two whole eggs and trade the butter for unsweetened applesauce. The sweet potato can also be substituted for banana!


Black Forest Protein Waffles

Makes 4 waffles


Ingredients:

1/2 cup (60g) Metabolic Nutrition Protizyme Chocolate Cake

1/2 cup (60g) gluten free flour

3 tbsp. (18g) dark cocoa powder 

1-2 tbsp. calorie free sweetener

1 tsp. baking powder

2/3 cup nonfat Greek yogurt

2 large whole eggs

3 tbsp. water

2 tbsp. light butter or buttery spread, melted

1/4 tsp. pure almond extract (optional)

3/4 cup pitted sweet cherries, fresh or frozen

1 tbsp. calorie free sweetener


Directions: 

Whisk together dry ingredients (through baking powder) in a medium mixing bowl. 

Add wet ingredients (through almond extract) and mix just until no dry clumps remain.

Preheat a waffle iron over medium-medium low heat and spritz with cooking spray. 

Add batter one half cup at a time to make four waffles (may need to use less if your waffle iron is small). 

Let your waffle cook until the iron beeps or until your waffle releases easily. Repeat for three more waffles.

Meanwhile, heat frozen pitted cherries in the microwave for 1 minute and stir in sweetener. If using fresh cherries, remove pits and heat over in a saucepan over medium-low heat until the cherries have a thick sauce.

Stack waffles on a plate and top with heated cherries, sugar free chocolate syrup, light whipped topping, and chocolate chips (optional). Enjoy!
