Carrot Cake Protein Slice

These Carrot Cake Protein Slices are perfect for a healthy Easter-themed treat. They've got moist spiced carrot cake topped with vanilla cream cheese frosting. Add raisins and walnuts for the ultimate carrot cake experience!

 

NOTES: We used pumpkin pie spice, but if you can't find it in stores, you can use 1 tsp. ground cinnamon, 1/4 tsp. ground nutmeg, 1/4 tsp. ground ginger, and a dash of cloves or allspice. You can also use reduced fat cream cheese or Neufchatel instead of fat free if you prefer. 

 

Carrot Cake Protein Slices
Makes 9 servings

Ingredients:
80g Metabolic Nutrition Protizyme in Butter Pecan flavor
1/2 cup (64g) gluten free baking flour
1/3 cup brown sugar alternative (we used Truvia Sweet Complete Brown)
1/2 tsp. baking soda
1/4 tsp. salt (optional)
2 tsp. pumpkin pie spice
1 1/2 cup carrot, finely grated
1/2 cup unsweetened applesauce 
1/4 cup (2 large) egg whites
2 tbsp. avocado oil 
1 tsp. vanilla extract 
1/4 cup seedless raisins (optional)
1/4 cup chopped walnuts (optional)
Frosting:
6 oz. fat free cream cheese, softened at room temp
2 oz. nonfat plain Greek yogurt
1/2 cup powdered sweetener (we used Swerve confectioner's erythritol)
1/4 tsp. vanilla extract 

Directions:

Preheat oven to 350 degrees F. 

Whisk together dry ingredients (through spice) in a medium mixing bowl. 

Add wet ingredients (through vanilla) and mix until no dry clumps remain.

Stir in raisins and walnuts (optional).

Line an 8"x8" baking dish with parchment paper (or coat with cooking spray) and spread batter over the bottom.
Bake for 30-35 minutes until the center is just barely set.

While your carrot cake cools, combine the frosting ingredients until smooth. Wait until the cake is cool before spreading over top, then place in the fridge to chill until ready to serve.

Slice into 9 equal servings and enjoy! We did 16 servings, but would have liked the slices to be a little bigger. With such great macros, why not!
