These Holiday Monster Protein Cookies taste like legit all-the-sugar all-the-butter cookies and we don't know how! We do know they're gluten-free, high in protein, and lower in sugar! Now, if only we could stop eating them...
NOTE: The buttery spread called for can be vegan buttery spread, unsalted butter, or margarine. Just don't use light butter if you want these cookies to be nice and crisp! You can substitute egg whites for the egg beaters in a pinch.
Holiday Monster Protein Cookies
Makes 12 cookies
Ingredients:
1 cup old-fashioned rolled oats
1/2 cup (60g) Metabolic Nutrition Protizyme in Butter Pecan
1/2 cup brown sugar sweetener
1/4 tsp. baking soda
1/4 tsp. salt
1/4 cup buttery spread, softened
1/4 cup creamy peanut butter
3 tbsp. egg beaters
3 tbsp. mini M&Ms
Directions:
Preheat oven to 350 degrees F.
Combine dry ingredients (through salt) in a medium mixing bowl.
Add wet ingredients (through egg beaters) and mix just until combined.
Mix in M&Ms gently.
Form dough into 2 tbsp. balls and arrange on a parchment-lined baking sheet.
Bake for 10-15 minutes until golden brown on the edges but soft in the middle.
Leftovers will keep in the fridge in an airtight container at least a week (if they last that long)!
