Iced Protein Sugar Cookies

You can't have Christmas without Iced Protein Sugar Cookies! These protein sugar cookies are actually sugar free, but so yummy Santa will never guess! They are also gluten free and only 85 calories per cookie. 

 

NOTES: We used gluten free flour but you can also use all purpose or fine oat flour. For the sweetener, we used Swerve granulated sweetener in the cookies and Swerve confectioner's sweetener in the icing. Feel free to use any sweetener that measures 1:1 like sugar! For the icing syrup, we recommend VitaFiber or another sugar free fiber syrup.

 

Iced Protein Sugar Cookies

Makes 16 cookies

 

Ingredients:

1 cup (120g) gluten free flour

1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake flavor

1/3 cup sugar free sweetener (like Swerve granulated)

1/4 tsp. baking powder

1/4 tsp. Salt (optional)

6 tbsp. nonfat plain Greek yogurt 

3 tbsp. cashew butter

3 tbsp. light buttery spread or unsalted butter

1/4 tsp. pure vanilla extract 

Icing:

1 cup sugar free powdered sweetener (like Swerve)

1-2 tbsp. cornstarch

3 tbsp. sugar free syrup (like VitaFiber)

3 tbsp. unsweetened almond milk

1 tbsp. light buttery spread or unsalted butter

1/4 tsp. pure vanilla extract 

 

Directions:

Preheat the oven to 350 degrees F. 

Whisk dry ingredients together (through salt) in a medium mixing bowl.

Add wet ingredients (through vanilla) and mix until a soft dough is formed.

Chill dough in your fridge for 30 minutes.

Lightly flour your surface and rolling pin, then roll out the chilled dough about 1/4" thick.

Cut into desired shapes using cookie cutters, then place on a parchment lined baking sheet.

Bake in your preheated oven for 10 minutes, or until puffed and soft in the middle.

While cookies cool, combine icing ingredients in a small mixing bowl using a fork or whisk.

Spoon icing into a piping bag with a fine tip (or a sealed baggie with one corner snipped off).

Decorate cookies with icing and sprinkles (optional). Enjoy!

Leftover cookies will keep in an airtight container in the fridge for at least a week or in the freezer for at least a month.
