Don't let the green color scare you away - white chocolate and green tea are a "matcha" made in heaven! These Matcha White Chocolate Protein Donuts have a hint of green tea flavor with white chocolate drizzled over top. Truly a unique combo sure to delight your taste buds! Best of all, they're gluten-free and macro-balanced.

NOTES: You can swap the coconut flour for twice as much gluten free baking flour. You can also skip the coconut oil and use two egg whites in place of the whole egg if you're needing lower fat. We didn't use sugar free white chocolate, but that's an option, too!

Matcha White Chocolate Protein Donuts

Makes 5 servings


1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake

1/4 cup coconut flour

3 tbsp. gluten free baking flour 

6 tbsp. calorie-free granulated sweetener (we used Swerve)

1 1/2 tsp. matcha green tea powder

3/4 tsp. baking powder

1/4 tsp. salt (optional)

1/4 cup nonfat plain Greek yogurt

1/4 cup unsweetened applesauce

1 large whole egg

1 tbsp. coconut oil, melted (optional)

1 tsp. pure vanilla extract 


2 oz. white chocolate 

1 tsp. coconut oil, melted


Preheat your oven to 350 degrees F. 

Whisk together dry ingredients (through salt) in a medium mixing bowl.

Add wet ingredients (through vanilla) and mix until a thick batter forms. 

Spoon batter into a baggie, seal it, and cut off one corner (slightly smaller than the width of your donut well). Squeeze batter into a well-greased donut pan.

Bake donuts in your preheated oven for 15-20 minutes or until set to the touch.

While the donuts cool, melt 1 oz. white chocolate and 1 tsp. coconut oil in the microwave using 30 second intervals, stirring in between until smooth, liquid, and glossy (don't lick your spoon or the moisture will make your chocolate grainy!)

Arrange donuts on a cooling rack or plate and drizzle with white chocolate. Enjoy!

Leftover donuts will keep in the fridge in an airtight container for at least a week.
