Nutella Stuffed Protein Cookies

If you've never had stuffed cookies before, why not start with these Nutella Stuffed Protein Cookies? As if a crunchy, chewy cookie wasn't delicious enough, we went ahead and stuffed them with "Nutella" for an over-the-top treat! Hard to believe they're low in sugar with a boost of protein and fiber. 

 

NOTES: You can use any chocolate hazelnut spread for these cookies, or another nut butter like peanut butter. You can also swap the coconut flour for six tablespoons of gluten-free baking flour or all-purpose flour. For the buttery spread, you can use unsalted butter or a vegan buttery spread.

 

Nutella Stuffed Protein Cookies
Makes 9 cookies

Ingredients:
3 tbsp. chocolate hazelnut spread (we used a low sugar brand)

1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake flavor
6 tbsp. coconut flour
1/3 cup calorie-free brown sugar sweetener
1/4 tsp. baking soda
1/4 tsp. salt (optional)
1/4 cup unsalted butter (or vegan buttery spread)
1/4 cup unsweetened applesauce
1/4 tsp. vanilla extract
3 tbsp. dark chocolate chips (optional)

Directions:
Preheat your oven to 350 degrees F. 

Take out a piece of parchment paper and drop Nutella or other chocolate hazelnut spread on paper using a teaspoon to make nine drops. Place in the freezer while you make your cookie dough.

Whisk together protein and other dry ingredients (through salt) in a small mixing bowl. 

Add wet ingredients (through vanilla) and mix until combined into a soft dough. 

Fold chocolate chips into dough (optional). 

Remove Nutella drops from the freezer and press 2 tbsp. of cookie dough around each drop. You may need to wipe your hands in between as Nutella will melt a little.

Place stuffed cookie dough balls on a parchment lined baking sheet about 2" apart.
Bake in a preheated oven for 10-15 minutes, or until golden brown on the edges and soft in the middle. Cookies will set as they cool.

Enjoy! Leftover cookies will keep in the fridge in an airtight container up to one week.
