These Protein Rice Crispy Treats are a protein-packed treat we can't get enough of! It's hard not to love a marshmallow crisp base with added protein and festive sprinkles ;) You can even make these treats low in sugar using sugar-free or keto marshmallows... yup that's a thing!
NOTES: We used Max Mallow keto marshmallows, but you can use regular marshmallows for a decadent treat that still has some added protein.
Protein Rice Crispy Treats
Makes 8 servings
Ingredients:
2 tbsp. buttery spread
3 packed cups (5 oz.) marshmallows
1/4 cup unsweetened almond milk
1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake
3 cups rice crispy cereal
2 tbsp. sprinkles
Directions:
Press parchment paper into the bottom of an 8"x6" Pyrex dish or loaf pan.
Melt your buttery spread in a saucepan over medium-low heat.
Add marshmallows and stir as they melt (don't let them sit or they might burn).
Stir in milk, remove from heat, and stir in protein and crisp rice.
Once the rice crispy mixture has started to cool and stiffen, fold in sprinkles.
Press into the bottom of the lined dish and place in the fridge for 30 minutes or until set.
Cut into 8 pieces and enjoy! Leftovers will keep in the fridge in an airtight container for at least a week.
