Celebrate Valentine's Day with these irresistible Red Velvet Protein Cookies! A hint of cocoa, tender cookie crumb, melty chocolate, and festive sprinkles make these a healthy treat to die for. These cookies also happen to be gluten-free, low in carbs and sugar, and high in fiber and protein.
NOTES: These cookies can also be made with about twice as much (2/3 cup) oat flour or all-purpose flour. You can use sugar free chocolate chips to lower the sugar content even more!
Red Velvet Protein Cookies
Makes 9 cookies
Ingredients:
1/2 cup (60g) Metabolic Nutrition Protizyme in Chocolate Cake
1/3 cup (40g) coconut flour
1/4 cup brown sugar sweetener (we used Swerve Brown)
2 tsp. unsweetened cocoa powder
1/4 tsp. baking soda
1/4 tsp. salt (optional)
1/4 cup almond butter
1/3 cup unsweetened applesauce
3/8 tsp. vanilla extract
2-3 tsp. red food coloring
3 tbsp. dark chocolate chips
Directions:
Preheat your oven to 350 degrees F.
Whisk together dry ingredients (through salt) in a medium mixing bowl.
Add wet ingredients (through food coloring) and mix until a thick dough is formed.
Fold in chocolate chips.
Spoon onto a parchment-lined baking sheet using heaping tablespoons.
Bake in your preheated oven for 8-10 minutes until soft and barely set in the center.
Decorate with festive sprinkles if desired!
Leftover cookies will keep in an airtight container in the fridge for at least a week, and in the freezer for at least a month.
