Rocky Road Protein Bars

These Rocky Road Protein Bars are low in carbs, high in protein, and low in sugar. They have no shortage of chocolate flavor, marshmallows, and sliced almonds either! These bars are perfect late night protein-snack-turned-dessert. 

 

NOTES: You can use twice as much oat flour in place of the coconut flour, or any nut or seed butter besides almond butter. You can also swap the chocolate syrup for sugar free pancake syrup, maple syrup, honey, or even water (not as chewy of a texture and more crumbly).

 

Rocky Road Protein Bars
Makes 5 servings

Ingredients:
140g (4 scoops) Metabolic Nutrition Protizyme in Chocolate Cake flavor
1/4 cup coconut flour
1 tbsp. unsweetened cocoa
1/4 tsp. salt

1/4 cup almond butter
1/4 cup chocolate syrup (or water)

3-4 tbsp. water
1/4 cup mini marshmallows
1/4 cup sliced almonds

 

Directions:

Whisk together protein powder, coconut flour, cocoa, and salt. 

Add almond butter, syrup, and 3 tbsp. water. Mix until a thick dough is formed. If it's too crumbly, add another tablespoon of water. If it's too sticky, add another tablespoon of coconut flour.

Fold in mini marshmallows and sliced almonds unti; distributed through dough.

Press dough into the bottom of a 7"x5" Pyrex dish or loaf pan lined with parchment.

Chill in the fridge for 30-60 minutes, then cut into 5 equal bars. 

Leftovers will keep in an airtight container in the fridge for at least a week.
