Not anymore - these Trail Mix Protein Bars are packed with protein and the perfect size for your typical afternoon hike. These chewy bars have all the goods: dried fruit, seeds, coconut, and chocolate. Mmm!
NOTES: You can swap the almond butter for any nut or seed butter you like, and the sugar free pancake syrup for maple syrup or honey. Feel free to try other add-ins too, like pumpkin seeds, hemp seeds, dried cranberries or blueberries, dried pineapple, on mini M&Ms.
Trail Mix Protein Bars
Makes 6 bars
Ingredients:
1 1/2 cup (180g) Metabolic Nutrition Protizyme in Vanilla Cake flavor
3 tbsp. coconut flour
1/2 tsp. salt
1/3 cup almond butter
1/3 cup sugar free pancake syrup
1/3 cup water
3 tbsp. dried cherries, chopped
3 tbsp. unsweetened shredded coconut
3 tbsp. roasted salted sunflower seeds
2 tbsp. mini chocolate chips
Directions:
Whisk together protein, coconut flour, and salt in a large mixing bowl.
Melt together almond butter, syrup, and water in a small saucepan over medium-low heat.
Add melted ingredients to dry ingredients and mix until a thick dough is formed.
Fold in dried fruit, coconut, seeds, and chocolate until distributed evenly.
Press mixture into the bottom of a parchment-lined 8"x6" Pyrex dish or loaf pan.
Chill in the fridge until firm to the touch. Cut into six equal-sized bars and enjoy!
Leftovers will keep in the fridge in an airtight container for at least a week.
