Cinnamon Roll Protein Blondies

These Cinnamon Roll Protein Blondies taste like a warm cinnamon roll in cake form! Think moist cake blondie with cinnamon "sugar" swirled throughout, drizzled with sugar-free icing. Best of all, each square is less than 125 calories with 8 grams of protein. Mmm! Now where's our coffee?

 

NOTES: This recipe calls for light buttery spread to reduce the fat content but feel free to use unsalted butter or buttery spread of choice. For an even lower fat version, substitute half the cashew butter for additional applesauce or yogurt. Be careful not to overbake!

 

Cinnamon Roll Protein Blondies

Makes 9 servings

 

Ingredients:

1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake

1/2 cup calorie free sweetener (measures 1:1 like sugar)

6 tbsp. gluten-free baking flour

1/4 tsp. baking soda

1/4 tsp. salt (optional)

1/2 cup unsweetened applesauce

6 tbsp. natural cashew butter

1/4 cup nonfat plain Greek yogurt

3/4 tsp. pure vanilla extract

Cinnamon swirl:

2 tbsp. calorie free sweetener (measures 1:1 like sugar)

1 tbsp. ground cinnamon

1 tbsp. light buttery spread, melted

Icing (optional):

3 tbsp. calorie-free powdered sweetener

2 tbsp. unsweetened almond milk

1 tsp. light buttery spread, melted

 

Directions:

Preheat oven to 350 degrees F. 

Whisk together dry ingredients (through salt) in a medium mixing bowl.

Add dry ingredients (through vanilla) and mix until combined.

Lightly grease or line an 8"x8" baking dish with parchment. 

Spread batter over the bottom evenly. 

Combine cinnamon swirl ingredients, then drop onto cake by half teaspoons, just about an inch apart. Swirl a knife through the top in a back-and-forth pattern. 

Bake for 20-25 minutes until set in the middle but a toothpick or knife inserted comes out a little gooey/dirty. Don't overbake!

While the blondies cool, combine icing ingredients (optional). Drizzle over top in the same pattern as the cinnamon swirl. 

Cut into 9 pieces and enjoy! Leftovers will keep in the fridge in an airtight container at least one week, or in the freezer at least a month.
