This Cranberry Almond Protein Bark makes a delicious protein-packed snack! It's got the crunch of sliced almonds and the chewiness of tart cranberries in a melty frozen yogurt base. Drizzle with white chocolate if you're feeling fancy! Even with the chocolate, it's a macro-balanced snack with a generous serving size.
NOTES: You can swap the sweetener and plain yogurt for sugar-free vanilla yogurt if you prefer! Thicker, less watery brands work best for a creamy texture.
Cranberry Almond Yogurt Bark
Makes 2 servings
Ingredients:
1 cup nonfat plain Greek yogurt
2-3 tbsp. calorie-free sweetener
1 scoop (35g) Metabolic Nutrition Protizyme in Vanilla Cake
1-2 drops almond extract (optional)
2 tbsp. reduced sugar dried cranberries
2 tbsp. sliced almonds
1 oz. white chocolate (optional)
1/2 tsp. coconut oil (optional)
Directions:
Combine yogurt, sweetener, protein powder and almond extract (optional) in a medium mixing bowl. Taste and adjust sweetness if needed.
Line a square or rectangle dish (roughly 8"x8") with parchment paper.
Spread yogurt mixture over the bottom of the dish.
Sprinkle with cranberries and almonds, then smooth again.
Place in the freezer for about one hour, then drizzle with melted white chocolate. We recommend microwaving white chocolate and coconut oil for 15-second intervals until liquid.
Break into pieces and enjoy half as one serving. Store other half in the freezer in an airtight container up to one month.
