Cinnamon Streusel Protein Coffee Cake

This Cinnamon Streusel Protein Coffee Cake is addicting! It's got a tender vanilla crumb, cinnamon sugar swirled throughout, and a buttery brown sugar streusel on top. You would never believe it only has 2 grams of sugar!

 

NOTES: Feel free to use all-purpose flour or oat flour in place of the gluten free flour. We used Swerve Brown sweetener in this recipe, but you can use any brown sugar alternative that measures 1:1 like sugar. 

 

Cinnamon Streusel Protein Coffee Cake

Makes 9 servings

 

Cake:

1 cup (120g) Metabolic Nutrition MuscLean in Vanilla Cake flavor

1 cup (120g) gluten-free baking flour

1/2 cup calorie-free brown sugar alternative

2 tsp. baking powder

1/2 tsp. salt

1/2 cup nonfat plain Greek yogurt 

1/2 cup unsweetened applesauce

2 large egg whites (or one large whole egg)

1/4 cup unsweetened almond milk 

1/2 tsp. pure vanilla extract 

Swirl:

1/4 cup (30g) Metabolic Nutrition MuscLean in Vanilla Cake

2 tbsp. unsweetened applesauce

1 tbsp. calorie-free brown sugar alternative

1 tbsp. buttery spread (or unsalted butter), melted

1 tbsp. ground cinnamon 

Streusel topping:

1/2 cup (60g) gluten-free baking flour

1/4 cup calorie-free brown sugar alternative

1/4 cup buttery spread, softened

2 tsp. ground cinnamon

 

Directions:

Whisk together dry ingredients (though salt) for cake in a medium mixing bowl.

Add wet ingredients (through vanilla) and mix until no dry clumps remain.

Combine ingredients for the swirl mixture in a small mixing bowl.

Layer half the cake batter over the bottom of an 8"x8" or 9"x9" baking pan lined with parchment. Spread swirl mixture over top, then swirl through with a knife. Spread the remaining cake batter over top. 

Combine ingredients for streusel with a fork until crumbly. Sprinkle over top cake batter. 

Bake coffee cake in the preheated oven for 30-35 minutes until a toothpick inserted comes out clean. Cut into nine equal pieces and enjoy!

Leftover cake will keep in a sealed container in the fridge for at least one week.
