Cranberry Glazed Turkey Mashed Potatoes

If you're feeling some Thanksgiving food, this meal prep will satisfy those cravings! This Cranberry Glazed Turkey & Mashed Potatoes meal combines roast turkey, homemade cranberry sauce, roasted green beans, and the best healthy mashed potatoes. It's a favorite over here!

 

NOTES: You can use whole turkey or frozen turkey breast for this recipe. We like turkey breast because it cooks faster, is the right amount of meat, and is all lean white meat. But use what you have! We used Swerve granular sweetener for the cranberry sauce, but any sweetener that measures 1:1 like sugar will do.

 

Cranberry Glazed Turkey & Mashed Potatoes
Makes 6 servings

Turkey:
3 lb. frozen boneless turkey breast
Salt + pepper
Cranberry sauce:
3 cups fresh cranberries

1/2 cup water
1/4 cup orange juice
1/4 cup calorie-free sweetener
Mashed potatoes:
3 lbs. gold potatoes
1 cup nonfat plain Greek yogurt
3 tbsp. buttery spread
1/4 tsp. salt

Green beans:

24 oz. fresh green beans

1 tbsp. olive oil

1/2 tsp. black pepper

1/2 tsp. garlic powder

1/4 tsp. salt

 

Directions:

For the roast turkey, thaw your turkey overnight and cook according to package directions. We cooked ours at 325 degrees F, uncovered for the last hour only.

For the cranberry sauce, simmer cranberries with water over medium-high until they burst, about 10 minutes. Add orange juice and sweetener, reduce to medium-low and simmer just until thickened and sweetener has dissolved. Set aside.

For the potatoes, wash then quarter whole gold potatoes. Add potatoes to a large pot with water covering them and bring to a boil. Boil 10-12 minutes until potatoes pierce effortlessly with a fork. Drain water and mash potatoes with a masher. Add yogurt, buttery spread and salt then fold to combine.

For the green beans, wash them and trim the ends. Toss with olive oil, pepper, salt, and garlic powder on a baking sheet. Bake at 400 degrees F for 15 minutes or so (while turkey cools). You can also steam the green beans instead!

Divide roasted turkey, cranberry sauce, mashed potatoes, and green beans between six meal prep containers and seal tightly. Food will keep in the fridge up to one week or in the freezer up to one month.
