These ghoulish treats are good for you too! These Frankenstein Protein Rice Crispy Treats use protein powder and sugar free marshmallows to keep your macros in check. They're also gluten free, egg free, and low in sugar and fat.
NOTES: We kept the sugar low using Max Mallow keto marshmallows for the crispy treats and Swerve Confectioner's for the frosting. You can use regular marshmallows - this will add 45 calories and 13 grams of sugar. You can also use another powdered sweetener that measures 1:1 like sugar.
Frankenstein Protein Rice Crispy Treats
Makes 8 servings
Ingredients:
150g rice crispy cereal
60g Metabolic Nutrition Protizyme in Vanilla Cake flavor
150g sugar free keto marshmallows
3 tbsp. unsweetened almond milk
2 tbsp. unsalted butter
6 drops green food coloring
Frosting:
6 tbsp. powdered sweetener (we used Swerve Confectioner's)
2 tbsp. cornstarch
1 tbsp. unsweetened almond milk (more if needed)
2 tsp. vegan buttery spread
6 drops black food coloring
16 candy eyes
Directions:
In a large bowl, whisk together protein and rice crispies in a large mixing bowl. Set aside.
Melt marshmallows, milk, and butter together in a saucepan over medium heat.
Remove from heat and stir in drops of food coloring until vibrant green.
Pour melted marshmallow mixture over rice crispy mixture and mix until well combined.
Press mixture down into an 11x17" casserole dish lined with parchment paper. Place your dish in the fridge.
Combine ingredients for frosting and beat until smooth. Spoon into a piping bag or sandwich bag with a 1/8" hole cut in the corner.
Remove rice crispy base from the fridge and cut into 8 equal pieces with a sharp knife.
Using your bag, decorate your "Frankenstein" with hair, a mouth, brow, and eyes. Quickly press candy two eyes into frosting before it hardens. Repeat for the other seven treats.
Leftovers will keep in an airtight container at room temp for up to one week. Can also keep in the fridge.
