Mummy Protein Cake Pops

Need a spooky treat that's healthier? Look no further than these Mummy Protein Cake Pops! Just microwave your white cake, roll into balls, and decorate with white chocolate with googly eyes. They look just like little mummies and taste incredible! And you won't believe the macros!

 

NOTE: You can double the batch, but we recommend microwaving one batch at a time to make four cake balls at a time (otherwise the cake might not cook all the way through). We used sugar free white chocolate, but you can use regular white chocolate if you so desire.

 

Mummy Protein Cake Pops
Makes 4 cake pops

Ingredients:
1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake
2 tbsp. coconut flour
1/2 tsp. baking powder
3 tbsp. unsweetened applesauce
3 tbsp. nonfat plain Greek yogurt
2 tbsp. (1 large) egg white
2 oz. sugar free white chocolate

8 candy eyes

Cake pop sticks

 

Directions:

Combine first six ingredients for cake pops in a small bowl. 

Transfer to a large greased coffee mug and microwave 1:30 minutes or until mostly cooked through.

Scoop out cake and crumble, then form into four equal-sized balls. Using wetted hands may help the cake stick to itself. 

Insert cake pop sticks into each ball and place in the freezer on a plate lined with parchment or wax paper.

Meanwhile, melt white chocolate in the microwave using 30 second intervals. If it's too thick, add half a teaspoon of coconut oil.

Roll semi-frozen cake balls into melted white chocolate and return to lined plate. 

Drizzle with additional white chocolate to make mummy "strips" and quickly press eyes into melted chocolate. 

Store in the fridge in an airtight container until ready to enjoy.
