Key Lime Protein Bars

These Key Lime Protein Bars are not only sweet and refreshing, they're also low in sugar and carbs! The tart custard-like filling with its crumbly, buttery base is pure heaven. Hard to believe it's macro-friendly!

 

NOTES: Key limes are uniquely zesty and aromatic, but you can totally use regular limes in this recipe. We used Swerve Confectioner's erythritol to sweeten these bars, but you can use any powdered sweetener that measures 1:1 like sugar. 

 

Key Lime Protein Bars
Makes 9 servings

Crust:
1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake flavor
1/2 cup almond flour
1/2 tsp. salt (optional)

1/4 tsp. baking soda
3 tbsp. buttery spread (unsalted butter or vegan buttery spread)
2 tbsp. water as needed
Filling:
1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake
3/4 cup calorie-free sweetener (we used one that measures 1:1 like sugar)
1/2 cup nonfat plain Greek yogurt
3 large whole eggs
1/3 cup key lime juice
1/2 tsp. vanilla extract
1-2 tsp. key lime zest

Topping (optional):

Sprinkle of powdered sweetener (like Swerve)

Directions:
Preheat oven to 325 degrees F.
Combine ingredients for crust using a fork until crumbly.
Line an 8”x8” baking dish with parchment and press mixture into the bottom evenly.
Bake crust for 5 minutes.
Whisk together ingredients for lime filling until frothy.
Mix in yogurt, eggs and egg whites, lime juice and zest, plus vanilla until smooth.
Pour filling mixture over pre-baked crust and return to the oven to bake for another 25-30 minutes or so until barely set in the middle.
Remove from the oven and let bars cool for 5-10 minutes, then chill for a minimum of 1 hour or overnight.
Before serving, sprinkle with powdered sweetener (optional) cut into nine equal squares. Enjoy!
Leftovers will keep in the fridge in an airtight container for at least a week.
