Protein Carrot Cake
When we think of Easter, we think of Carrot Cake!
This single serve cake is only 260 calories and packs in a whopping 30 grams of protein!!!
Guilt Free Carrot Cake? Absolutely!
Try topping it with some cream cheese for the perfect treat.
Make it plain or add some crushed walnuts or raisins.
Don’t have a small cake pan? No problem, just bake as muffins or a small loaf.
Ingredients:
1 scoop @metabolicnutrition Vanilla Cake (35g)
2 Tbsp whole wheat flour (16g)
1 Tbsp quick oats (8g)
1 container carrot baby food (1/2 cup)(113g)
1 Tbsp egg substitute (15g)
1 Tbsp unsweetened almond milk (15ml)
1/2 tsp baking powder
1/2 tsp cinnamon
Sweetener if desired
Instructions:
- Mix all ingredients til smooth
- May need more/less milk depending on protein used
- Pour batter into mini bundt pan coated with nonstick spray
- Bake at 350 for 30-35 minutes
- Top with cream cheese
Try as muffins or in a donut pan!
