You've been warned, these Pumpkin Chip Protein Cookies are addicting! From the soft-baked texture, to the pumpkin spice flavor, to those melty chocolate chips... we can't get enough! These irresistible cookies are gluten-free and low in sugar with a boost of protein to keep you feeling full.
NOTES: If you don't need these to be gluten-free, you can use all-purpose flour. For the brown sugar sweetener, you can use any calorie-free substitute such as Swerve Brown, Truvia Sweet Complete Brown, or Lakanto Golden. For the buttery spread, you can use a vegan buttery spread (like Earth Balance) or unsalted butter.
Pumpkin Chip Protein Cookies
Makes 15 cookies
Ingredients:
1/2 cup (60g) Metabolic Nutrition Protizyme in Butter Pecan
1/2 cup calorie-free brown sugar sweetener
1/2 cup (64g) gluten-free flour
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg (optional)
1/4 tsp. ground ginger (optional)
1/4 tsp. baking soda
1/4 tsp. salt (optional)
1/2 cup 100% pure pumpkin
3 tbsp. buttery spread, softened (vegan spread or unsalted butter)
3 tbsp. almond butter
1 large whole egg
1/2 tsp. pure vanilla extract (optional)
2 oz. dark chocolate chips
Directions:
Preheat oven to 350 degrees F.
Whisk together dry ingredients (through salt) in a medium mixing bowl.
Add wet ingredients (through vanilla) and mix until well combined.
Stir in dark chocolate chips.
Drop cookies onto a parchment-lined baking sheet by rounded tablespoons.
Bake for 8-10 minutes until soft in the center but set on the edges. Make sure you don't over-bake!
Cookies will set in the middle as they cool.
Cool cookies for 5-10 minutes then enjoy! Leftovers will keep in the fridge in an airtight container at least a week, or in the freezer at least a month.
